These soft, baked donuts are dressed with pumpkin spice and Pecan Praline. Serve up with a side of Honey Vanilla Crème Fraiche and enjoy!
Ingredients
Pumpkin Spice Blend:
100g or 3/4 cup ground cinnamon
50g or 6 tbs ground ginger
50g or 6 tbs ground nutmeg
50g or 6 tbs ground cloves
For the donuts:
200g or 4 eggs
130g or 6 tbs honey
120g or 6.5 tbs pumpkin puree
10g or 1 1/4 tbs spice mix
60g or 1/3 cup granulated sugar
300g or 1 1/4 cups milk
430g or 3 1/2 cups mochiko (sweet rice flour)
20g or 1 1/2 tbs baking powder
70g or 5 tbs butter, melted and cooled
Directions
1. Preheat the oven to just under 350 degrees Fahrenheit.
2. In a separate bowl, put the sweet rice flour and baking powder through a sieve and keep to the side.
3. In a separate bowl, whisk together the eggs, honey, sugar, pumpkin spice, pumpkin puree and milk until well mixed.
4. Whisk in the flour mix until combined.
5. Whisk in the butter.
6. Pour the batter into a piping bag.
7. Grease the donut pans and pipe the batter until it is 3/4 of the way full for each ring.
8. Bake the donuts for 11 minutes.
9. Remove from the oven and let cool before removing from pan.
10. Once cooled, serve with Pecan Praline on top with a side of Honey Vanilla Crème Fraiche. See recipe links below.
