Bacon, onions, and garlic meld seemlessly with creamy Yukon Gold Potatoes for a cozy and comforting side with your dinner.
Ingredients
5lbs of medium Yukon Gold Potatoes
1/2 cup salt
12 slices of bacon, chopped
2 medium red onions, diced
1/2 cup minced garlic
1 cup chicken broth
1/2 cup apple cider vinegar
2 tbsp Dijon mustard
2 tbsp granulated sugar
1 cup fresh chopped parsley
4 tbsp olive oil
Salt and pepper to taste
Directions
Combine whole potatoes and salt in a pot and cover with water.
Bring to boil and lower to a simmer. Cook until fork tender.
Render bacon in a pan until almost crispy.
Add onions and garlic and sweat until tender.
Add the vinegar, chicken broth and mustard and reduce until almost dry.
Cut the potatoes into quarters or 1 inch cubes depending on size.
Toss the potatoes in the bacon mixture and cool down together so the potatoes absorb all the flavors.
